Here is an article on how to make gluten-free croutons. The directions are the same for non gluten-free bread. You can also try your hand at French toast, making sure that the egg mixture completely saturates the sliced bread. You could make your own bread crumbs. Or you could take a look at one of our Bread Pudding recipes and see which one you'd like to make. It looks like you have plenty of options for your "brick"!
