I have a question regarding the holes in the crumb. I try very hard to deflate the dough after the first rise. I roll it out and deflate any bubbles I could see. Second rise is fine. However, after the bread is baked and cool, when I sliced the bread, I would find gaping smiley lips in the bread. Sometimes they are huge all the way across the bread, at times they are smaller. Can you help me understand what could have gone wrong? This seems to happen often when I make a loaf. When I make rolls, no gaping smiley lips greet me.
