Thank you thank you thank you!!! I've been struggling with the second proof and oven spring for 4 months and this article finally gave me an answer. Today I tried the classic white sandwich bread and during the first proof, I read this article to troubleshoot this rise issue. IT WAS THE DRY TEA TOWEL!!! A simple switch to a wet tea towel made all the difference. Thank you so much for this lovely article and I can't wait to keep baking. :D

Kinda bummed about all those suppressed loaves I made, but here's to future high risers!
