It's all in the recipe and the shaping, Tom! The wetting a dough, the more difficult it is for it to not spread outward rather than upward. Shaping plays a huge role, and we have a helpful video showing a few different shaping techniques for different shapes of loaves that we think you'll find very useful. Happy shaping! Annabelle@KAF
