I have found an easy solution for keeping dough moist while it is rising. I have a large under-bed storage bin, made of plastic, with a lid that snaps on. It holds several loaf pans. There is plenty of room for the dough to rise, the lid keeps the moisture in, and I can see the loaves without raising the lid.
