Some loaves have more oven spring than others, Aamee, but if your recipe indicates that you should get some nice oven spring, it may be that your oven isn't cool or moist enough. With artisan-style loaves, in particular, adding steam helps to ensure that the crust doesn't set until the loaf has finished rising. You can read our tips about using steam in baking here. If your loaf is falling at all in the oven, then over-proofing may be to blame, as we explain in #2 above and here.
