Jen, it can be a challenge to bake in a cold, dry environment. I make good use of my microwave as a proofer during the winter months. You can boil water on the stove and then put a pyrex cup in the microwave to make it warm and moist. Recharge as necessary by replacing the cold water with boiling water; just don't turn on the microwave with your dough in there! Be careful if you're boiling the water in the microwave as it can become superheated and blurp up dangerously. Placing a wooden spoon or popsicle stick in the cup of boiling water will help prevent this from happening. If you don't have a microwave, our proofer may transform your winter bread baking experiences. Barb@KAF
