I hope you can help me with this. Judging by it's loaf shape, my dough seems to have the problem of being too dry. But it's the perfect springy, slightly sticky consistency as you described before I put in the oven. I always set mine out for a second rise in the bread pan before I bake it, with a second bread pan turned over and place on top. Do you think it is getting dehydrated in this step? Would placing a wet cloth over it help?
