I'm trying to cut down on my wheat consumption and increase my protein intake. I put some pretty heavy ingredients in my bread for added nutrition: sesame seeds, sunflower seeds, nuts, various whole grains (Bob's Red Mill 6-grain cereal). The bread only rises to about 4" high. The flavor is very good. It makes delicious as toast but it's too dense for a sandwich. The loaf is really very heavy and dense. It needs to be sliced very thin. I have two questions: 1) Is there any hope of getting such a heavy bread to rise any more? 2) How do I know how much to use of each added ingredient? I use 2 cups of water, 2 tablespoons of honey, 4 cups of flour (half regular whole wheat and half white whole wheat) and then 1/4 to 1/2 cup of the additions. I'm really just guessing.
