Aloha PJ, I use SAF red (should be instant?). When I make bread with eggs, it rose really well throughout, but without eggs (everything else essentially the same, little less sugar), it doesn't rise nearly as well. While I keep my yeast in the fridge, again, I have no problem if I have eggs in the mix. Leslie
