Hi Jack! Great project to be working on. We would recommend taking a look at our Baker's Croissants recipe for some guidance here. You could use the measurements included in those instructions for the size batch that you are wanting to work with.  A 10" x 20" or a 9" x 18" rectangle for a dough made with 500 grams of flour would be ideal for lamination.  Happy Baking!
