Hello! I do not intend to make 5 lbs of dough and instead will use the guide for a recipe that calls for 500 grams of flour. Is there a way to scale/re-calculate some of the measurements for how large the rectangles of dough/butter should be? I would assume I shouldn't roll a much smaller recipe out to a 18" x 30" rectangle.
