Hi Magna, if you're asking if you can use laminated dough to make pinwheel-style pastries, the answer is yes. The pastries known as palmiers are a version of this approach. They're made from laminated dough that has a layer of sugar sprinkled on top, and then they're rolled in from either edge. (They're also known as Elephant Ears.) You're more than welcome to give this a try if you're up for the additional work required to make laminated dough. Kye@KAF
