Hi there, Lucy! It sounds like you've been feeding the sourdough that you discarded from maintaining your starter, is this correct? If so, you don't have to feed the discarded starter that you're keeping in the fridge. If you haven't been discarding when feeding the starter in the fridge, it might not be very balanced which could make for a less healthy starter that isn't very vigorous. You're welcome to try using it in sourdough bread recipes though! We'd recommend using it in recipes that also call for commercial yeast if you're not up for a little bit of an experiment though.
