I use cookie cutters to vent pies after putting on the top crust. I leave the "cookie" in place as a rule. Four hearts, points to the center, makes a 4-leaf clover, for example. A big gingerbread boy worked nicely; I added a mouth with the tip of a knife and cut eyes and buttons with a plastic straw. Trimmings from the edge can also be re-rolled, cut into shapes and added to the top crust, as you did with the stars on the edge; a bunch of cherries with a leaf is easy.
