Hi Zaafira, we haven't used cake gel, so can't advise you on best practices with this type of product, but if your process worked well in the past and isn't working now, something must have changed. It might be helpful to think back and consider if you have changed any of the ingredients or equipment you normally use. Try to stick to no higher than medium speed when using your mixer. However, if you don't sufficiently blend in the melted butter, this could contribute to gluey streaks, so folding by hand might not do the trick.
