Hi. I have been making cakes with cake gel and I've never had issues until recently. I tried everything but the gluey streak remains. I use a mixing method where the melted butter goes in the end. I've tried mixing it gently, so much so that I've switched to folding it by hands !!! The streaks are still there. I use a hand mixer, Kenwood's and the highest is speed number is six. The recipe states that i cream the eggs, sugar and cake gel first until it's "white and creamy". I do like always but now i am facing the gluey problem. My entire home business depends on this recipe so please please please help me out. At what speed and for how long should i cream the eggs sugar and cake gel? After i add the liquid to the egg mixture, until when should i mix? Because it does loosen the mixture.
