I wish you would clarify what you mean by medium speed. I would think most people (as I do) use a stand mixer for making a pound cake. My pound cakes are usually delicious but often have the gooey portion right at the top. You stated this was probably from over creaming the butter and said not to use a speed higher than medium. My Kitchenaid stand mixer has 10 speeds and I never go above a 2 yet often still get the gooey top. BTW, it happens more with a chocolate pound cake I make than it does with the plain ones. Any other tips?
