This gummy issue happened for my mother-in-law after making a Sour Cream Pound Cake in a tube pan for many years. Quizzed her on all the obvious things: how flour was measured, egg size, temperature, and so on. I rewrote her recipe directions using the High Ratio method by Rose Levy Beranbaum, and from that point on, every cake was perfect.
