We're sorry to hear that you're having such trouble, Sherry! Over-mixing could be the cause of this problem. Have you made the same recipe each time? If so, it could be the recipe, we'd suggest stirring the batter together by hand next time. Another reason a cake might not rise properly is if the leavening ingredients have expired or the ingredients are out of proportion.
