To make your cakes even, wrapping cake strips around your pans helps insulate them. This allows the cake to bake evenly. They dome because the edges of the cake set up before the center has a chance to rise, so the cake strips slow down the heat transfer on the edges. We have a whole blog about it. Mixing your cake batters by hand may help! Once you've mixed the dry ingredients with the soft butter you can add the liquid and stir it in by hand.
