Hi, Thank you so much for this post. I was about to loose hope and started to think baking is not for me. I had issues where the whole cake ends up dense, not parts of it. I think I was mixing the butter and eggs and sugar too much. It shows more when I dirty ice the cake and place it into the fridge, I was thinking maybe the fridge is doing this, I only have a problem with vanilla sponges.
