Hi Carol- Just an average speed by hand should be fine for bringing everything together, with maybe a little quick mixing just to fluff up the batter a bit at the end to ensure a full creaming and incorporation of all the ingredients. No need to kill yourself with a super-fast whipping throughout, but I hold a great deal of respect for anyone who dares to take on an angel food cake from scratch.
