So, if over beating the gluten causes dense streaks, what happens if using gluten free flour? Is it immune, or does this have the same effect on potato starch and xanthum gum additives. (Unfortunately, my wife also seems to have a reaction to tapioca as well, otherwise I would just ask you about your gluten-free all purpose flour).
