Hi Lori! This is a great question. Too often folks will try to "punch" down their dough to deflate it, and then really just toughens up the gluten a bit too much. Check out this short but helpful video on how we deflate our risen dough. That should hopefully be just what you're looking for. Thanks, and happy baking!
