Thanks for sharing this additional information, CLL! Have you tried decreasing the yeast? 1 tablespoon of yeast for one loaf is quite a bit of yeast. Also, are you using active dry yeast or instant or even rapid-rise yeast? We'd suggest double-checking that you're using regular active dry yeast and decreasing the amount a bit, maybe try 2 to 2 1/4 teaspoons. We hope this helps!
