Any ideas on what I can do to help my loaf not super-rise, then fall?
I pasted the ingredients from the video for the bread recipe below. The guy just puts everything in the bread machine and sets it to "basic", but when I did that it came out like a brick. My "basic" cycle has 3 rises, so I had to go to a manual setting and give it only one. I've been decreasing my rise times, then added a second knead/rise cycle to see if that would help. The last loaf I let rise 10 minutes, then knead, then rise 45 minutes. When the baking cycle kicked in, the loaf super-inflated all the way to the top of the bread machine (then promptly fell and shrunk down, pulling away from the sides of the pan as it cooled). I baked it for an hour, based on how long my machine bakes on other cycles. I've tried the oven version, as well, with the same results; super-inflates during baking, then falls as it cools. I've tried baking it longer in the oven, but that just dried it out. Other than maybe decreasing the rise time to only once at 20 minutes.. and/or omitting the xanthan gum.. I'm stumped as to what's going on with my bread.
Ingredients for the Keto Yeast Bread:
1 cup slightly warm water (23C - 25C / 73.4F - 77F) (240ml/8.1oz)
2 Eggs (lightly beaten)
1/2 cup of Oat Fiber (41g/1.45oz)
2/3 cup of Flaxseed Meal (70g/2.46oz)
1.25 cups of Vital Wheat Gluten (190g/6.7oz)
1 teaspoon Salt (6g / 0.21oz) – spread around outer edge of container
0 - 4 Tablespoons powdered Sweetener (0g-60g/0oz-4oz : 30g/2oz is a good amount)
1 teaspoon Honey (7g/0.25oz) – spread around outer edge of container
1/2 teaspoon Xanthan Gum (2.5g/0.088oz) – spread out evenly
2 Tablespoons Butter (30g/1.05oz)
1 Tablespoon Active Dry Yeast (8g/0.28oz)
