I have been making my own bread for almost a year now using the same recipe and in the last six I have made rise perfectly during the first one, the dough is nice and pliable. I have watched several videos on how to form a proper loaf and they look great in the bread pan. I let them rise until they are just at the top of the pan. I haven't tried the finger test, poking it to make a belly button. When they bake they are rising way above the pan and one side splits open and the top rises more on that side. It never happened before and I cannot figure out why it is doing it.
