Hi Kathleen! It sounds like your dough is happy and/or your house is warm so your loaves are over-proofing. Rather than going off of the time, you'll want to base your decisions on what the dough is doing. As soon as an indent stays in the dough when you poke the loaf with your finger, get it in the oven as soon as possible — it's ready.
