Hi there, Heidi! We're sorry to hear that your feeling discouraged with your bread baking! It sounds like you may not be putting enough dough in the pans. A standard 8 1/2" X 4 1/2" loaf pan holds a recipe with about 3 cups of flour in it. You may find our Choosing the right bread pan article helpful. Using instant yeast is just fine as long as it isn't the rapid rise formulation, which is only good for one strong rise. We hope this helps get you back to happy baking! Morgan@KAF
