What a great article - thank-you!!! My bread usually turns out fine, but I am eager to start poking it more to learn about this extra test (besides just measuring how high the dough rose above the edge of the pan). I learned so much, and this demystified the poking aspect of it for me. LOVE learning so much about baking from you guys!
