Hi there, I'm so glad you enjoyed reading the blog. If we can't laugh at our own baking flops who can, right? For most people, the coarse crumb that comes with over risen bread isn't what they're looking for from a sandwich bread. The structure is weak, and the center of the bread breaks easily.
