Joan, if they're so delicate that you can't gently brush them with melted butter or egg, then yes, I'd say they're over-risen. Try letting them rise to about 3/4 of where you think they should be, then brush and bake. They should rise the rest of the way in the oven, and will still be sturdy enough for brushing ahead of time. Good luck — PJH
