I am having a similar problem trying to make rolls. My recipe calls for me to shape them in muffin pans, then let them rise. It says to brush with butter or egg at this point, before I put them in the oven - but that knocks them down! Am I letting them rise too much? Do some cooks have success with brushing them without deflating them?
