Aw yes, I also use the look, feel and smell for my bread. I also use the taste of the dough, just a pinch tells me if it's salty enough and if the yeast is strong. At 78 I've probably tasted a few loaves of dough. I've never had much of a problem with KAF flour it's pretty dependable, occasionally I get a very heavy loaf but I'm sure it's something I've done or not done. I love reading all the comments on these pages, you can always learn something new and exciting. I've picked up three things today that I"m going to try. Thanks for all the help you give all of us.
