Thank you so much for this tutorial that makes so much sense. This has been happening to me as well and couldn't figure out what I was doing wrong. Coming from Vermont myself I always buy King Arthur flour! I make the same bread every week that I recently saw on Cook's Country - Dakota Bread. It's made with Bob's Red Mill 7 grain hot cereal (I use the 10 grain version), pumpkin seeds, sunflower seeds, poppy and sesame seeds. It is super hearty, full of fiber and takes incredible - the best bread I've ever tasted!
