2 tablespoons is a LOT of yeast! 2 teaspoons is plenty for raising a loaf with up to 4 cups of flour. Are you using all-purpose or bread for your white flour? If all-purpose, try getting more strength for the dough with some bread flour before you start adding vital wheat gluten. For bigger holes, you want to have a wetter dough, and long, slow rises. Try, after the dough rises in your basket, turning it out into an 8" or 9" greased round cake pan and baking in that; the sides will give the bread just enough support to help the bread rise higher.
