It sounds like your bread may be over rising before it gets to the oven, Cheryl. Try putting it in the oven when it is not quite so high in the pan. You should see a nice jump over the first 10 minutes or so after you place it in the oven. IF this isn't happening it means that the yeast is spent before it hits the oven and your bread is more likely to collapse.
