My kitchen is usually at about 82F because I live in Hawaii. My bread loaves rise quite quickly, as you might expect. Is that a bad thing? I read somewhere that such fast rising doesn't allow the favors to develop fully. Is that correct? And are there other techniques that would work better in this heat/humidity? Aloha!
