Hi Jill, I am sorry you are having trouble with your Zo. If your bread is rising too quickly, you might want to try starting out with cooler water. We have very detailed instructions on programming the Homemade Cycle of the Zo (http://www.kingarthurflour.com/tips/zojirushi-programming-tips.html); this allows for greatest control over the timings of each step.~Jaydl@KAF
