I have noticed this problem in the past, but had no clue what to do about it. When I think about it, I have the over-rising problem more in the summer months than the winter months. I have always set a timer and walked away until it went off -- guess I shouldn't do that, I should be more vigilent. Quick question -- does rise matter if you use a pain de miel pan? After all the goal is square with corners, no a pretty top. Juli
