Hi there, this should work great with our gluten-free pancake mixes or gluten-free pancake recipes. You could also substitute our Gluten-Free Measure for Measure flour into a regular pancake recipe if you'd like to give this a try. Baking time may vary when making a gluten-free version, so keep an eye on them. My guess is they will take a bit longer to bake, but I would still check at the recommended time.
