Susan, I've been making pounds cakes for years and all of a sudden, the cakes rise up to the top and when I take them out of the oven to cool in the pan for 10 minutes before inverting them on the wire rack, the cake will decrease in height about two to three inches. Sometimes the cake will be grasey on the bottom. I'm using the same ingredients and measuring the same way. I don't know what has happened. Softasilk cake flour representative said that I was problem beating the eggs to much before adding the flour. I am a baker and am doing the same that I've done for years. I get orders all the time and this is really getting next to me. I need some advice. Thank you.
