Thank you for this great article. My big hang up with cake flour has always been about taste. The smell of cake flour is off putting to me. I've always used the Softasilk brand. Does unbleached cake flour have that same smell or any idea why it smells different than regular flour? I mean, if a recipe calls for cake flour, I shy away from it because I don't want the aftertaste. Is it just me?
