As the name implies, whole wheat pastry flour is great for pastry (read pie crust here!). It's also amazing for quick breads like muffins/scones/biscuits, and great in tender cookies or cakes. Check out the (KAF) Whole Grain Baking cookbook at your local library or bookstore and you'll be inspired to do a lot of baking, using it in recipes you never imagined could still yield soft and tender results with a whole wheat flour.
