Hi Roberta! When baking a cheesecake that you don't plan on serving out of the pan, you can place a grease-proof piece of cardboard or a pre-cut piece of parchment on the bottom of the pan before placing your crust on top of it. Then when it comes time to remove the cake from the pan, you can get a good amount of purchase underneath the cake to lift it out with a thin spatula. Happy baking!
