Both work quite well, Jean! It really comes down to personal preference, how you are looking to decorate the cake and what kind of icing and filling you're going with. For heavier cakes/frostings/fillings, sheet cakes and acetate would be the sturdier method, though it does create a lot more waste. For lighter cakes, these are easy enough to simply do free hand using cake rounds. Happy baking!
