Hi Erika, While shortening isn't always a fan favorite, in this case it's going to be the best helper you'll have. Add about 1/3 to 1/2 cup to the icing, depending on how much you're making. If you can score a cool, shady spot and a fan, that will be helpful as well to keep things from drooping. Good luck, and I'm sure they will be thrilled no matter what. ~ MJ
