The structure of cake is different than bread, so the dry milk will not necessarily help your cake rise higher in the same way. If you are looking to get a higher rise and a more tender texture out of your cake we recommend using our cake flour blend and also adding 1-2 tablespoons of our cake enhancer. The cake enhancer will keep your cakes fresher for longer and help them be more like a bakery-style cake, light and fluffy. Give these two things a try to bring your cakes to the next level.
