Why brown only half of the butter? I routinely make my standard chocolate chip cookie recipe with browned butter, browning the full measure called for in the recipe, and add back a bit of the lost water with a tablespoon or two of cold coffee or milk. I'm not opposed to trying it this way, but it would be helpful to know what the goal is. Thanks!
